Today, I posting Kaju flower, which was I prepared for Diwali, but now only gets time to post this...I think this is a right time to share the yummy sweet recipes.... Actually I don't like Cashew nut in the whole form, but I love it in powder form like kaju katli, flowers n all... Whenever I go to any sweet shop or restaurants my eyes will go for this kaju flower and all milk sweets...
That much I love it... Usually I will buy mixed sweets of milk and kaju sweets like 1/4-1/2kg.. I will emptied the box within one day, I won't give for my brother too!!! He he he... am very crazy for the sweets esp. milk and kaju.... I got the recipe from one of our blogger's circle and she used liquid glucose to get the desired and constant shape but I didn't have that so am not using that but no problem not bad in the shape its came out still good... 

I was planned to make kaju katli for the diwali, by luckily I was seen the kaju flower in net and no delay I prepared the flower and am very happy to see the wonderful sweet... You too try this and treat to your family and friends and let me tell the feed backs...

Little about Kaju sweet
Here I discussed about kaju katli, because it has some variations to make the many kaju sweets like different shape.

Kaju katli is an Indian dessert similar to a barfi. Kaju means Cashew nut in Hindi. Barfi is often but alwayss, made by thickening milk with sugar and other ingredients. The kaju barfi recipe that include saffron and is known as kesar kaju katli. The kesar version of this sweet dish is considered to me more exotic and rich. It is an expensive dessert as compared to its counterparts.

Recipe Source - Ratatouille - Anyone can cook - Chitra

INGREDIENTS
Cashew nuts - 1/2 cup
Ghee - 1 Tsp to grease plate and hand
Orange Food color - A pinch
Apple Green Food color - A pinch
Milk - 1 Tsp (Optional)

Sugar syrup
Sugar - 1/4 Cup
Water - 2.5 Tbsp


METHOD

  • Powdered the cashew nuts in a mixie jar into fine texture.
Making Sugar Syrup 
    • Take a non-stick pan (Preferably) add sugar and water to it and boil it till you get single thread consistency.



Making Sweet Kaju
    • Now add the cashew powder to it and mix it well.
    • Stir continuously otherwise it will sticky and may burnt so stir and cook for 3-5 minutes till it leaves the pan. 
  • Now greased the tray with ghee and make color solution by adding water to the food color.
  • Keep the cashew sweet dough into the greased plate and divide into two parts  using spoon coz it will be hot and mix the food color solution to each one.
  • Knead the dough nicely when it is in warm temperature otherwise it won't combined well, if the dough is dry add 1/4 to 1/2 Tsp of milk and knead the dough well.
  • Now divide the dough into small balls. 

Making Kaju Flower
  • Take one any color ball in your ghee greased hand and make s circle by pressing in your palm.
  • Next keep the other color ball in the center of the circle and close it fully and just roll in your palm once to get ball size.
  • Do the same for all the balls with your choice of colors in and out and keep it aside 30 minutes to set.

  • Now using a sharp knife cut the ball like flower shape like 4 -8 Petals.
  • Serve it.

 NOTE
  • Sugar syrup consistency is very important to this sweet, so we need single thread consistency.
  • If your cashew dough enough smooth no need to add milk.
  • Use sharp knife to cut the flower otherwise it will not come out good and be careful while handling knifes.
  • If you wish garnish with silver warq.
